Milk pie with raspberry sauce

by | Aug 30, 2024 | Desserts

Tejes pite or milk pie is a traditional dessert that blends simplicity with comforting flavors. This dish is often compared to a custard or flan due to its soft, creamy texture. It is essentially a baked custard made primarily from milk, eggs, sugar, and flour, creating a pie that’s delicate yet satisfying. The pie develops a golden crust while remaining tender inside. There is a strong emphasis on not using any leavening agents like baking powder or soda, which keeps the texture soft and custard-like.

This recipe elevates the classic milk pie by pairing it with a homemade raspberry sauce. The tangy sweetness of the raspberries perfectly complements the creamy, subtle flavor of the pie, creating a balanced dessert that is both nostalgic and refreshing. Whether you are familiar with Hungarian cuisine or discovering it for the first time, this combination of traditional milk pie with a modern twist of raspberry sauce is sure to delight your taste buds and warm your heart.

Hungarian cottage cheese

This is what Hungarian túró looks like

You often ask me what kind of cottage cheese (or curd cheese or farmer's cheese - call it what you want) I use in the recipes. In Hungary the store-bought cottage cheese is dry and crumbly as you can see in the picture. So if a recipe calls for túró, I mean this type. If you can't obtain túró, you can try to make your own from whole milk. Click on the link below.

Metric system vs cup

In Hungary metric units are in use, all the recipes on this website are based on this system, so a kitchen scale is necessary. Since I’m not familiar with cup as a measurement unit, I convert grams to cups by using an online converter. The values in brackets, therefore, are only approximate volumes, so, please, double-check them before you start cooking.
