by | Aug 30, 2024 | Soups

Roasted red pepper soup is a comforting and flavorful dish, that brings together the vibrant taste of roasted red peppers with the richness of a creamy, seasoned broth. Roasted red peppers are simply fresh red peppers, that have been cooked until their skins are charred and their flesh becomes soft and sweet. Roasting enhances the natural sweetness of the peppers while imparting a smoky flavor that adds depth to any dish. Once roasted, the peppers are easy to peel, and their tender flesh can be used in a variety of recipes, from soups to sauces and salads.

Nutritionally, red peppers are a powerhouse of vitamins and antioxidants. They are particularly rich in vitamin C, which is crucial for boosting your immune system and promoting healthy skin. Red peppers are also a good source of vitamin A, which is essential for eye health, and they contain compounds like lycopene and beta-carotene, known for their anti-inflammatory and cancer-fighting properties. Moreover, they are low in calories, making them a healthy addition to any diet.

In this recipe roasted peppers are the star ingredient, bringing both flavor and nutrition to the table. Paired with sautéed onions and garlic, and enhanced by the warm, earthy notes of caraway seeds, this soup is as nourishing as it is delicious. The addition of potatoes gives it a hearty texture, while the final touch of cream ensures a smooth, velvety consistency.

Hungarian cottage cheese

This is what Hungarian túró looks like

You often ask me what kind of cottage cheese (or curd cheese or farmer's cheese - call it what you want) I use in the recipes. In Hungary the store-bought cottage cheese is dry and crumbly as you can see in the picture. So if a recipe calls for túró, I mean this type. If you can't obtain túró, you can try to make your own from whole milk. Click on the link below.

Metric system vs cup

In Hungary metric units are in use, all the recipes on this website are based on this system, so a kitchen scale is necessary. Since I’m not familiar with cup as a measurement unit, I convert grams to cups by using an online converter. The values in brackets, therefore, are only approximate volumes, so, please, double-check them before you start cooking.
