Gluten-free linzer cookies

by | Oct 3, 2025 | Breads, buns & biscuits

Linzer cookies are one of those timeless classics that never go out of style – crumbly, buttery and filled with sweet jam. They’re a favorite around the holidays, but honestly, I could enjoy them any time of the year.

Recently, I’ve started experimenting with gluten-free baking, since more and more people I know are affected by gluten sensitivity. This website isn’t turning into a health-focused lifestyle blog, but because gluten intolerance touches so many, I find it meaningful to share the occasional recipe. I even have friends who are gluten-intolerant, and I often bake for them. So whenever I come across a Hungarian-inspired recipe that feels truly worth passing on, you’ll find it here.

This gluten-free version of linzer cookies is simple to make, wonderfully tender, and just as delicious as the traditional recipe. They’re proof that even with a few ingredient swaps, you don’t have to miss out on the joy of homemade cookies.

Hungarian cottage cheese

This is what Hungarian túró looks like

You often ask me what kind of cottage cheese (or curd cheese or farmer's cheese - call it what you want) I use in the recipes. In Hungary the store-bought cottage cheese is dry and crumbly as you can see in the picture. So if a recipe calls for túró, I mean this type. If you can't obtain túró, you can try to make your own from whole milk. Click on the link below.

Metric system vs cup

In Hungary metric units are in use, all the recipes on this website are based on this system, so a kitchen scale is necessary. Since I’m not familiar with cup as a measurement unit, I convert grams to cups by using an online converter. The values in brackets, therefore, are only approximate volumes, so, please, double-check them before you start cooking.
