Molehill cake

Molehill cake, known as “Maulwurfkuchen” in German, is a delightful pastry that has gained popularity in Hungary. This cake is reminiscent of a molehill in appearance, with its domed shape and crumbled cake topping, giving it a rustic and inviting look. The cake base is a rich and moist chocolate sponge, created by combining flour, cocoa, and baking powder with whipped egg whites and a creamy egg yolk-sugar mixture. This base is then hollowed out to make room for a luscious filling.

The filling of the molehill cake is where its charm truly lies. Sliced bananas are placed inside the hollowed cake, adding a fresh and fruity contrast to the chocolate. Over the bananas, a generous heap of whipped cream, combined with chopped chocolate and stabilized with gelatin, is mounded to form the characteristic dome. The final touch involves sprinkling the reserved cake crumbs over the whipped cream, creating a textural contrast and an earthy aesthetic. This cake not only looks impressive but also offers a harmonious blend of flavors and textures that make it a beloved dessert in Hungarian households.

Hungarian cottage cheese

This is what Hungarian túró looks like

You often ask me what kind of cottage cheese (or curd cheese or farmer's cheese - call it what you want) I use in the recipes. In Hungary the store-bought cottage cheese is dry and crumbly as you can see in the picture. So if a recipe calls for túró, I mean this type. If you can't obtain túró, you can try to make your own from whole milk. Click on the link below.

Metric system vs cup

In Hungary metric units are in use, all the recipes on this website are based on this system, so a kitchen scale is necessary. Since I’m not familiar with cup as a measurement unit, I convert grams to cups by using an online converter. The values in brackets, therefore, are only approximate volumes, so, please, double-check them before you start cooking.
