Stefánia cake

Stefánia cake is associated with the name of Sissi’s son, Rudolf’s wife. Princess Stéphanie of Belgium, who was a great fan of Hungarian cuisine, had a particular fondness for sweets, and this cake, a slightly simplified version of the Dobos torte, was her favorite. Like the famous Dobos torte, Stefánia cake consists of six thin sponge cake layers with real chocolate cream in between. The only significant difference is that the top of the Stefánia cake is traditionally dusted with cocoa powder, making it a good alternative for those who may be hesitant to prepare the Dobos caramel glaze.

While the original Stefánia cake boasts six thin layers, the following version consists of only four, making it quicker and easier to assemble. Additionally, unlike the classic round shape, this cake is made in a rectangular form, which adds to its simplicity. Despite its straightforward preparation, this cake delivers the same indulgent experience with its light sponge layers and luscious chocolate filling.

Hungarian cottage cheese

This is what Hungarian túró looks like

You often ask me what kind of cottage cheese (or curd cheese or farmer's cheese - call it what you want) I use in the recipes. In Hungary the store-bought cottage cheese is dry and crumbly as you can see in the picture. So if a recipe calls for túró, I mean this type. If you can't obtain túró, you can try to make your own from whole milk. Click on the link below.

Metric system vs cup

In Hungary metric units are in use, all the recipes on this website are based on this system, so a kitchen scale is necessary. Since I’m not familiar with cup as a measurement unit, I convert grams to cups by using an online converter. The values in brackets, therefore, are only approximate volumes, so, please, double-check them before you start cooking.
